Just open: Buffalo Bar, Brisbane CBD

Brisbane's culinary lexicon is about to expand with the opening of another American eatery, brother to Mighty Mighty in Fortitude Valley.

Buffalo Bar dips deeper than the usual deep south fare with a pan-American menu featuring hoagies (Philadelphia), 'anadana' bread, clam bakes from New England, chopped salads and Buffalo wings from the state of New York and Cajun crab cakes from New Orleans.

"I really wanted to show people that American food isn't just limited to southern barbecue," says group chef Adam Herbert.

Buffalo Bar's owner is Simon O'Brien, who also owns Mighty Mighty in Fortitude Valley.

Head chef will be Daniel Jones, who has come from Locanda Osteria, under Herbert, who is responsible for the popular southern centric there and has been working on the menu at Buffalo Bar,

As well as a 'dining hall', the heritage listed building that was until recently home to The Belgian Beer cafe will feature a whiskey lounge and a craft beer garden.

Mighty Mighty regulars will be pleased to know the legendary 'poppers' (stuffed jalapenos with a blue cheese dipping sauce) are on the Buffalo Bar menu, along with a signature range of 18 different types of buffalo wings.

Like Mighty Mighty, smoking features prominently, with the kitchen producing its own cold cuts, smoked over beech wood infused with apple juice and orange peel.

"We're doing everything but the ham in house, including bacon, pork belly, pastrami Boston butt, and turkey," Herbert says.

Most are destined for the 'hoagies' (subs) 10 inch rolls such as 'Philly Baby' with slow roasted NY strip, fried red capsicum, onions and provolone and the 'Don Corleone' with pork and beef meatball, Napoli sauce and mozzarella.

The smoker isn't retired at the business end of the menu either, with the signature dessert a smoked crème brulee.

As at Mighty Mighty, craft beer will be a big feature but Buffalo Bar is pushing the envelope even further with a list of pretty serious American craft beers put together by beer expert Matt Kirkegaard, from Big Sky's 'Trout Slayer' to Rogue's 'Dead Guy' Ale and Heretic's 'Evil Twin'.

"We're absolutely busting to share Buffalo Bar with Brisbane," says Simon O'Brien.

"We couldn't be more pleased to see our dreams actualised in a venue we're proud to be opening to Brisbane's CBD very shortly."

'Very shortly' is, in fact, Wednesday November 26 ahead of their Thanksgiving celebration (Thursday November 27) where the public is invited for free signature Buffalo wings between 12 and 4pm. Home of the brave indeed!
