Just open: Burger Liquor Lobster in Manly and Paddington

The sites where chef Warren Turnbull's Chur Burger once stood in Manly and Paddington have been given a crustacean spin and transformed into Burger Liquor Lobster.

Chur Burger at both the Manly Wharf Hotel and Paddington's London Hotel was always intended to be a pop-up.

A spokesperson for publican Ben May, who operates both hotels, said he decided to transform the spaces into Burger Liquor Lobster in a response to punters wanting further choice. Turnbull has no involvement with Burger Liquor Lobster.

The lobster roll ($15) looks to be a feel-good hit over summer, with salt-and-pepper lobster chunks, lemon aioli, chives, red onion and iceberg lettuce. Also at the $15 mark are a soft-shell crab burger and a crusty Vietnamese roll filled with an Opera House arrangement of tiger prawns.

The burgers at Burger Liquor Lobster are priced at $10 and read similar to the Chur creations, although with different, non-brioche buns.

The menu includes a beef burger with smoked tomato chutney, a pulled pork number with bourbon sauce, "red slaw" and fennel mayonnaise, and a vegetarian option with a chickpea and lentil fritter, beetroot yoghurt and a kale and corn relish.

The Manly site remains largely unchanged, sticking with its modernist sea-shack look. Meanwhile, The London has turned up its nautical notch and decked the space out with glass buoys, ropes and crab pots.

The Burger Liquor Lobster pop-ups will operate throughout the summer. When autumn hits, goodfood.com.au understands the spaces could morph into something else again.
