It's the new cupcake or the new macaron, depending on how swift a trend chaser you are, but whatever its position, it seems impossible to escape the now not so humble doughnut. Or it's croissant-hybrid cousin the cronut for that matter.

Bigger, brighter and ever more exotic, it's still the comfort of the classics we go for, says Tony Kelly. He's just opened his third Donut Boyz in Paddington in inner Brisbane, selling 1500 doughnuts on opening day last weekend.

"Our best seller is the lemon meringue, but after that it's plain old vanilla glazed and raspberry filled doughnuts that sell out." Kelly says.

Formerly the executive chef at Stokehouse at South Bank, Kelly moved to Maroochydore to open OS3 (Now 'Junk', a casual south east Asian eatery) and burger bar Hello Harry, before continuing his Ocean Street takeover with Donut Boyz. He recently opened a second doughnut store in Brisbane's West End. The third store has bagged itself a sweet spot, in the former Crocs shop next door to Merlo Coffee.

"We have plans to open Donut Boyz on the Gold Coast, Ipswich and Toowoomba with the plan to eventually have around 15 in South East Queensland. It'd be easy to go nuts but we have to be wary of the doughnut bubble bursting," he says.

Currently the doughnuts are made on the Sunshine Coast and trucked down daily but Kelly says they're looking to set up a production kitchen in Brisbane.
