It's out with Middle Eastern and in with Greek flavours. After closing for a month, Made Establishment's Moorish outpost St Katherine's has morphed into Hellenic Republic Kew in the huge Cotham Road space.

The Greek taverna has opened with a menu much like the Brunswick original, plus a few new dishes, including Kew baklava, made with date, walnut and cacao nibs, says executive chef and co-owner Travis McAuley.

The room has been redesigned by North Melbourne-based studio Clare Cousins Architects and now seats up to 100 downstairs (previously 180) with a private dining room for 100 upstairs.

Part of the space has been set aside for a pastry shop. Called Sweet Hellenic, it will sell Greek pastries and breads from a separate entrance. It's expected to open next June, around the time a third Hellenic Republic opens in Williamstown.
