Just Open: London Fields, West End, Brisbane

Bonnie Shearston and Tom Sanceau, owners of Public, Red Hook and Coppa Spuntino, have added a "gastropub" to their growing portfolio.

The pair and business partner Jason White opened London Fields on the weekend, before the liquor licence came through on Wednesday.

The pub's name references the trio's history; Shearston and Sanceau are both English and met White in London.

"London Fields is also an area in London where they used to take livestock to auction and our menu is fairly meat-heavy," Shearston says.

"There are plenty of veg options too but we do have a fair bit of nose-to-tail incorporated into the menu."

Removed from the West End's chaotic heart in a residential area on Montague Road, it seems an unusual location for a pub, but Shearston says they're banking on developments that will see thousands move into the area by the end of 2016.

Already owners of a restaurant, bar and burger joint, why now a pub?

"Jason is originally a kiwi but has lived in London for many years and owned a gastropub in north London for a while. We love the concept of gastropubs and always find ourselves spending lots of time drinking/dining at them when in the UK," Shearston says.

Shearston, Sanceau and White worked with Adam Laming on the pub's interior. Laming also designed their other venues. The brief was "English gastropub with a neutral decor and lots of raw material".
London Fields seats about 100 with a capacity of 140 including the bar and beer garden.

Chef Con Tsangaris' (ex Urbane and Gerard's Bistro) simple menu befits a pub with an emphasis on nose-to-tail dining. Bone marrow, smoked tongue and sweetbreads all feature, plus seafood dishes like clams, oysters, mackerel and Murray cod. There's also a bar menu, and weekend breakfasts.

The trio have snapped up Alan Hunter (ex Ecco Bistro) as sommelier, and Rob Scott (ex Canvas and Papa Jack's) as head bartender.

Open Mon-Thu 10.30am-9pm; Fri 10.30am-10pm; Sat 7am-10pm; Sun 7am-9pm.
