Just Open: Pidapipo Gelateria, Windsor

Pidapipo's second store swings open its doors in Windsor at 4pm on Friday, April 8, with a free scoop of gelato for anyone prepared to get in line.

On Chapel Street, directly opposite queue-magnet Hawker Hall, designer Rabindra Naidoo​ has created a similar pastel aesthetic to the original Carlton store using materials such as terrazzo, marble, brass and stainless steel. "You'll notice it is a Pidapipo, but we want it to have a feel of its own," says owner Lisa Valmorbida.

Now, this doesn't just mean more gelato for southsiders – this means more gelato for everyone; the second location includes a substantial prep kitchen, aka The Laboratory, so expect to see new flavours at the Carlton shop, too.

The extra space means house-made cakes, tarts and biscuits will make their way into daily-churned gelato flavours – think carrot cake and mascarpone; sticky date pudding and caramel; and saffron risotto, a rice pudding-style gelato with chewy rice pieces and a bright yellow hue.

Gelato granitas are exclusive to the Windsor store – a scoop of gelato with an icy crushed topping (up to four flavours based on seasonal fruits plus a coffee option) designed to "mush together like Splice or a spider".

Both stores will offer made-to-order "gelato cakes" – like the ice-cream cakes of your childhood dreams, but actually cool; perhaps pumpkin pie – cinnamon-spiced tart shell filled with pumpkin gelato-topped pecan brittle – or banoffee pie, a crumbly biscuit shell with layers of fresh banana and caramel, and banana gelato topped with vanilla semifreddo.

Pidapipo will continue to collaborate on flavours (past projects included a cola float with Taco Truck mastermind Raph Rashid). First up they've created a top secret '80s disco flavour with local musicians Client Liaison called Word of Our Love (named after a single from Client Liaison's debut album).

The Windsor store follows Valmorbida's first permanent venture which opened in Lygon Street in December 2014, after a successful 2013 summer pop-up.
