Melbourne dessert master Pierre Roelofs is back, pulling soft-serves on summer weekends. Roelofs' pop-up Pierre's will set up outside Green Park Dining in Carlton North from Saturday.

Pierre's will serve soft-serve treats with flavours such as Milli Vanilli (soft-serve topped with vanilla meringue, jellies and pound cake), and Puffed Daddy (soft-serve topped with dulce de leche (caramel), puffed millet, puffed corn rolled in golden syrup, and date balls). Handmade flavours and toppings will change weekly.

The pop-up is the result of Roelofs' collaboration with Jesse Gerner (Anada, Green Park Dining) and the team at Bomba. After searching for a fun, casual way of presenting and serving his desserts, Pierre's will be a small teaser, as Roelofs and the team work towards a larger, more permanent project.

"The pop-up is a meantime idea that we're having fun with," Roelofs says. "We're using a plain vanilla soft-serve base and playing around with flavours and garnishes to make it fun."

Roelofs ended his cultish weekly Dessert Evenings at Cafe Rosamond in 2014, before revisiting the concept at Adriano Zumbo's Fancy Nance last year..

"I felt like it was time to change and do something fun, lighthearted, and more accessible to a larger, less niche market," Roelofs says. "I'm really excited. It is a really good time to be doing this in Melbourne, there's so much happening at this time of the year."
