If you are feeling like an American-diner-meets-Jamaican-kitchen experience, Rosie Campbell's opens at the old Bentley site in Surry Hills on Monday, July 13.

The walk-in jerk diner and rum bar will offer brunch, lunch and dinner, giving locals a taste of the bold and spicy flavours of the Caribbean.

It's the brainchild of Experience Group director Graham Cordery, who is also behind nearby venue, The Soda Factory.

"The last time I was in Jamaica I thought, 'Wow this is it'," says Cordery. "The inspiration's all around me, and the creative juices started to flow."

Bold and bright is the general interior theme, with vivid colours, Jamaican signage and an all-round homely vibe.

"People can feel the love that's gone into the attention to detail. It's hard to miss us," Cordery says.

The Jamaican cuisine includes jerk chicken with homemade jerk sauce, coconut-infused rice 'n' peas, soft-shell crab burger with tamarind sauce, and Red Stripe beer-braised oxtail patties.

"My favourite on the brunch menu item is the pancake stack with sugar banana, spiced rum butter and maple syrup," he says.

There is a lot of fresh pineapple, mango and coconut throughout the menu, alongside aromatic herbs, warm spices and pickled vegetables.

About 50 bottles of imported rum are on offer, many from Cuba and the Caribbean, as well as a range of rum-based cocktails and American beer by bottle and tap.
