Just Open: St Burgs, Maribyrnong

There's a party going on in Maribyrnong. Groups of kids congregate out the front of a new apartment building and a line wriggles out the door. Locals are excited about their new burger joint, St Burgs.

Founded by burger-obsessive Dan Soto​ and backed by his two brothers, St Burgs is an homage to the American artform. "Anywhere you go, you know it tastes good, because Americans have perfected the burger," says Soto.

In line with the US model, St Burgs is keeping it simple. Its trademark Durger burger uses grass-fed beef with a 30 percent fat ratio and is cooked so it's crusty on the outside and pink within, with standard-issue yellow cheese, gherkin relish for even consistency, a slice of fresh tomato, a single leaf of cos and a smoky barbecue sauce.

St Burgs is bucking the brioche trend. "I'm not a fan of the brioche; I find it a bit too overpowering," says Soto. "We use a milk bun. It's sweet, it's light, it's more of an egg-based type of bun."

The rest of the menu is equally succinct: A Western Fried Chicken burger with slaw and Sriracha; the St Shroom cheese-stuffed mushroom number; and the Double D, a super-sized Durger with a bacon rasher.

Sides include Filipino-style chicken wings, and seasoned cut chips.

Open Tue-Fri 6-9pm, Sat-Sun noon-7pm.
