The working name of Munich Butcher didn't prove popular for his new eatery, so restaurateur John Szangolies (Sake, Ananas) has renamed it Swine & Co.

Opening Tuesday, at 16 O'Connell Street in the city, Swine & Co has plenty of its namesake on the menu. There's suckling pig, pork belly with Tuscan cabbage, and crisp pig's tail with pine puree, grapes and pickled mushrooms.

Chef Robert Taylor, last spotted at Manly Pavilion, also spent time in the kitchen at Pier, so the expectations will be high with Swine & Co's calamari with fennel and main course dish of king salmon.

The art deco building features a deli and open-plan bar on the ground floor, a mezzanine-level champagne bar and underground dining.
