Small Sydney bars with "secret" entrances, graffiti-scribbled walls and botanical cocktails keep popping up everywhere, but not all of them have a rooftop like Taylor's.

Taylor's, brought to you by the good people at Ryan's Bar on George Street, opened last week and promises to exude an unfussy, Aussie vibe. The rooftop will pump with live music, courtesy of acoustic acts during the week and every Saturday night with a residency from electro label "etcetc".

The menu consists of classic pub fare such as a wagyu beef burger ($17) and coq au vin ($21) and lighter options including a grilled prawn and dried chorizo salad ($18.50) or Sydney rock oysters with grilled sourdough and apple chutney ($12.50).

There's also unpasteurised Carlton Draught on tap.

"It's actually held in a bright tank and then chilled and delivered to the venue," Taylor's creative director, Phillip Burriel, says. "At no point does it actually touch oxygen. It's the freshest beer you could have – full bodied, very creamy and very flavoursome."

There's a lower level for revelling too, but, even in the depths of winter, the best parties are always on the roof.
