Just Open: The Humble Quinoa, Indooroopilly

Will Samra cut his milk teeth on coffee – his father was the franchisee of a couple of Coffee Clubs. "That's how I started making coffee, but then I went to Melbourne where all my uncles and cousins have cafes, and that's where I really learned about and fell in love with coffee," Samra says.

Whether he'll feel the same way about it after pulling hundreds of espresso shots at his own cafe, The Humble Quinoa, remains to be seen.

Returning to Brisbane from Melbourne, Samra started to look around for a space to set up his own place. The Indooroopilly site Samra eventually settled on is owned by his father's business partner.

"I thought the space was good and there wasn't a lot of great options in the area for a decent feed and good coffee. I think there's a real market for suburban cafes," Samra says.

He's employed the services of Minh Le from New Farm's the Foraging Quail to put together the menu. "There's lots of students around here, so the idea was to make it great food but still affordable," Samra says.

The most expensive dishes on the menu are the braised pork belly with fennel and apple salad, and catch of the day with quinoa, peas, bacon, mint and watercress, both priced at $24.

Le's Vietnamese background pops up a couple of times; in a breakfast dish of Vietnamese savoury mince with chilli, beans, baked egg, toast and sheep's yoghurt, and a lunch dish of fried Vietnamese chicken wings.

There's also the ubiquitous wagyu burger, along with a pasta and a couple of vegetarian dishes and a small take-home deli section of charcuterie, cheese and olives.

The interior is dominated by a large mud-bead chandelier from South Africa.

While Le will be popping in on a weekly basis and looking over the kitchen, he's appointed a chef, Lui Loops, to oversee the day to day running of the food side of the business.

Samra, meanwhile, will be out on the floor and doing what he loves best – working the coffee machine.
