Just Open: The Tilbury Hotel, Woolloomooloo

After a series of renovations, Woolloomooloo Tilbury has reopened its doors to offer a modern, fresh setting and menu. It's the first time in 12 years the hotel has had a revamp and owners the Whitehouse family have chosen to revive both indoor and outdoor spaces.

"We wanted to give people a more relaxed experience when visiting the hotel, both in the restaurant and bars, without jeopardising the already simple classic style The Tilbury possesses," says Scott Whitehouse.

The Tilbury's interior features new lighting and timber furniture mixed with a splash of soft pastel tones and gold brass trims, giving the venue a light, contemporary feel. The new outdoor courtyard seating, iron bar structure and bold, bright backdrop offers a fun yet relaxed ambience.

The new look is complemented nicely by the bar's new grill menu and the restaurant's high-end summer fare, the latter of which is brought to you by chef James Wallis, former winner of television program Ramsay's Best Restaurant in the UK. On the menu is smoked salmon with Hendrick's, cucumber consomme and herb salad; sauteed wild mushrooms, whipped soft cheese, roasted yeast, hazelnuts; and miso glazed scallops, turnip, crispy pig's tail and seaweed.

A dessert tasting platter offers liquorice panna cotta, blood orange and smoke almond ice-cream; chocolate malt fondant, banana and ale ice-cream; and salted chocolate tart, beetroot crumb and raspberry.

Open Mon-Sat noon-3pm, 6pm-10pm; Sun noon-5pm.
