Glen Waverley has been inching away from its traditionally Asian food reputation in the past year, with newcomers Steak Ministry and Mount Waverley's South Society, plus a Jimmy Grants outlet set to open next year.

Trei is the latest cafe to join the movement. Co-owners Sarah Whitfield and her partner Dimitri Dean – who previously owned Sardi, and currently own Muharam Cafe in Hawthorn – saw a lack of variety in the eastern Melbourne suburb.

"We've lived in Glen Waverley all our lives and I found there was a lack of healthy cafes," Whitfield said.

Trei, meaning third, offers health-focused food including homemade paleo and gluten-free breads. Trei uses unrefined sugars in their baked goods where possible and Whitfield hopes to have whole loaves available for sale.

The menu is a blend of clean-eating brunches, from the superfood bowl with kale, edamame, pepitas, almonds, asparagus, lemon and poached eggs($17.50); to pulled lamb burgers on a beetroot bun with goat's feta, pickled onions, crumbed eggplant, harissa mayo and sweet potato fries ($18.50).

Smoothies include snickers, matcha madness and red velvet. Or sneak in a not-so-clean-eating Mars Bar muffin.

Located around the corner from Glen Waverley's main street, pastel colours are the go at Trei. Featuring a hand-painted, symmetrical wall mural and a textured white bench, Trei's interior is bright and clean compared to the clutter of Kingsway.

Open Tue-Fri 7.30am-4pm; Sat-Sun 8am-4pm.
