Just Open: Walk Don't Run organic cafe, Armadale

Vincent Conti and Mario Minichilli ­– the dynamic duo behind East Bentleigh cafe the Merchants Guild and speciality chai company Prana Chai – unveiled their newest venture on Wednesday.

It's a "mindful gourmet" cafe in Armadale where the fitout is slick, the menu is 100 per cent organic and the focus is on ensuring customers leave "feeling nourished and energised".

In the kitchen, chef and co-owner Ryo Doyama (ex St Edmonds) has combined his Japanese heritage and a commitment to quality organic wholefoods with seriously delicious results.

You'll find nutritious raw salads and superfood breakfasts alongside Japanese-accented dishes such as green-tea noodles with poached chicken, green beans, nuts and tahini-ponzu dressing.

Interiors come via Eades & Bergman (Kong, Mr Miyagi, et al) and, in keeping with the Zen-like vibe, there's no espresso machine; instead you'll find single-origin French press coffee, cold-pressed juices and herbal teas.

Be sure to save space for their raw, sugar-free treats.

Walk Don't Run is open from Wednesday to Sunday, 7am–3pm.
