Karen Martini is off to Spain on Tuesday to open a brand new summer-only restaurant on the south-east coast of Ibiza. "We've only really had the last three months to bring it all together," she says. "It's a bit terrifying as well as totally thrilling. What an opportunity."

The restaurant is Cala Bonita, which loosely translates as "pretty cove". It's on an undeveloped beach surrounded by wild pines, rosemary and fennel. There are tables at the edge of the sand, an open deck that seats 120, and about 40 lounges that can be booked.

Martini will be on the pans, dishing up a seafood-heavy, mod-Mediterranean menu, such as whole sole with seaweed butter and mushrooms or salt-baked Ibiza prawns. "We're trying to celebrate the local produce, the cheese, the honey, the cured meats, the seafood," Martini says. "A lot of restaurants there aren't celebrating that."

They are currently recruiting for experienced front-of-house and kitchen staff "for those who want to come on the ride and experience the first season with us", Martini says. BYO working visa. "It's a little piece of paradise."
