Kiyomi Japanese restaurant to open at Jupiters casino on the Gold Coast

Jupiters Hotel and Casino on the Gold Coast will open a new restaurant in mid-December as part of its $345 million refurbishment.

Kiyomi, on the hotel and casino's fourth floor, will serve a contemporary Japanese menu.

Executive chef is Chase Kojima, head chef at Sydney's one-hatted Sokyo restaurant at The Star. Kojima specialises in cutting-edge Japanese cuisine and has led Nobu kitchens in Las Vegas, Dubai, London, Los Angeles and the Bahamas.

Prices at the upmarket Japanese restaurant are unlikely to be in the poker machine budget, with dishes such as scampi with foie gras; white soy, apple and mizuna salad; binchotan (Japanese charcoal) duck breast with beetroot, sansho pepper and wasabi; and robata grilled salmon with ssamjang miso and watercress.

"Kiyomi will centre around the delicious flavour 'umami'," Kojima says. "We will be celebrating unique yet simple flavour combinations which bring the natural flavours of the produce to life. It is all about using simple garnishes, simple sauces and simple combinations to create truly delicious dishes."

The drinks list will include a wide variety of Japanese tap and bottled beers, sake, shochu cocktails and Japanese whiskies.

The 120-seat restaurant will feature a nine-metre sushi bar. The interior has been designed by Luchetti Krelle, designers of Fat Noodle at Treasury Casino & Hotel in Brisbane and Momofuku Seiobo and Adriano Zumbo at The Star in Sydney.

Luchetti Krelle director Stuart Krelle says Kiyomi's design is inspired by Japanese minimalism and the layering of cultural cues with sharp, contemporary detailing.

"You'll see traditional Japanese motifs but in an unexpected way, such as handmade backlit paper suspended in glass panels within the sushi counter," Krelle says.

"We're also using handmade Japanese umbrella-inspired feature pendants from Kyoto."

The Jupiters redevelopment includes a six-star luxury hotel and a clutch of new contemporary restaurants and bars.
