When one Lee Ho Fook closes, another one opens. Within a week of Victor Liong's modern Chinese restaurant in Collingwood shutting (to be reopened by Liong and business partner David Mackintosh as casual Chinese diner, Goldfish), the new city venue opened.

The former warehouse has the kitchen and 16 seats downstairs, and up to 60 seats upstairs. The interior is classic and quirky with bare brick, pendant lighting, and furniture in blond wood and dark wood and … carpet.

"I love carpet and closed kitchens," Liong says. "I have chosen things that people think are daggy."

Signature dish: Tea-smoked eggs.

He has carried over his menu from Collingwood – the tea egg and steamed barramundi are just two of the dishes he says will never change – and extended the wine list.
