We've been talking about this restaurant since way back in October, when we first brought you the news that Josiah Li and his partners at the Chairman Group were set to open a modern Japanese diner at the Burbury Hotel.
A first taste of the menu in November revealed chef Shunsuke Ota's emphasis on umami-laden, very cool bites, particularly a dish of dashi roast vegetables in a pot made out of an orange and we had a look at the pop-Japanese interior.
