Lipton brings a little bit of New York to Albion

Ice-cream sandwiches and ice-cream filled cupcakes! Sweet tooths and big kids will be doing a happy dance, when Confectory in Albion opens on May 6.

The owner is Jade Lipton, who also owns cupcake bakery Cake Star just behind the Sandgate Road premises. Lipton says she was inspired by the current trend in New York for premium ice-cream desserts such as those being served up at Momofuku Milk Bar. The idea is to build your own desserts, with cupcakes or biscuits as a base – add gelati to the centre, drizzle over a syrup such as lavender blossom or raspberry and balsamic, then add sprinkles like fresh fruit compote, home made honeycomb or rocky road.

"I've taken cupcakes pretty much as far as I can, this is the next stage," Lipton says.

The cupcakes and biscuits, which include red velvet, triple chocolate and walnut and meringue, are made in-house from organic butter, Maleny Milk and organic eggs, while the gelato is coming from Colin James, also in Maleny. Campos coffee will also be on offer.
