After serving up more than 6000 lobster rolls at the annual Taste of Melbourne event, the team from Huxtaburger has fast-tracked its latest venture, Mr Claws.

Daniel Wilson says half a container of sustainably farmed North American lobsters is heading Down Under for the Mr Claws pop-up, beside Huxtaburger at 104 Smith Street, Collingwood.

They'll serve the $15 buns in three styles – miso and wasabi, sriracha-spiced mayonnaise and buttermilk ranch – plus potato straws and pickled gherkins for an extra $3.
