Machiavelli to open airport spin-off

Sydney CBD restaurant Machiavelli has been the famed setting for political plots and secret handshake deals. Now its powerbroker diners will be able to conduct business over a meal in transit.

The family behind Machiavelli will be revealed this week as the latest food operator going into Sydney Airport's T1.

When it launches in June, Machiavelli's Mach2 spin-off will join a growing band of seasoned food operators to have delved into the world of air travel.

Some have worked, MoVida doing good business, while others such as Danks Street Depot failed to take off, closing late last year.

Yet the lure of the airport has grown.

Neil Perry is believed to be sniffing sites at T1, and Bambini Wine Room owner Michael Potts says he's keen to find another airport location after his T1 venue was swallowed up by an expanded duty-free area.

Sydney Airport General Manager Retail, Glyn Williams, says Mach2 is another example of established brand taking up residence.

Williams says tens of new operators are slated to join Mach2 , including Hokka Hokka, Soul Origin and upmarket bar-cafe Grand Cru, which served its first vino last week.
