Madame Truffles to open Sydney pop-up

Truffle lovers, this one's for you.

Madame Truffles is opening its first ever Sydney store and a second outlet in Melbourne, featuring a range of top quality truffles from all over the country.

It's the fifth year Madame Truffles creators Bernadette Jenner and Simon McCrudden have been selling truffles in Melbourne, but there has been a growing online demand from Sydneysiders.

The Sydney shop will open on June 26 and the Melbourne store on June 18. The stores will be open for just 10 weeks as truffles are only harvested at certain times of the year.

Prices range from $2.60 to $3.40 per gram.

They'll stock everything from truffle honey, truffle salt and truffle popcorn, to truffle pasta, truffle macaroons and even truffle ice-cream.

"I know it sounds disgusting, but truffle and cream is like a match made in heaven," Jenner says.

"You get this beautiful kind of creamy flavour and then you get this kind of hit of truffle at the end of the palate."

Some pasta flavours available in Sydney include prawn and truffle ravioli, and potato and truffle ravioli.

The idea was born in Sydney, where Jenner once bought a truffle and was disappointed by its bland smell.

Half a decade later, she is bringing the experience back to where it all began.

"People can come in and they can look and smell at all the different truffles, which is quite different from other shops that sell truffles where they are hidden behind glass containers."

Jenner said her favourite truffles change weekly.

"Because truffle is so dependent on the weather and the soil, one week you can have a beautiful big smoky truffle from Braidwood and the next week you'll get this beautiful truffle from Tasmania, which has this kind of forest smell to it."

Madame Truffles will hold a Sydney truffle dinner at Pasta Emilia on July 15 to celebrate the store's opening, hosted by truffle growers Peter and Kate Marshall.
