Too many noodles are barely enough for Melbourne, and demand is especially high at Crown's vast palais de punt on the Yarra, where the HuTong team are about to open the 200-seat Man Tong Kitchen.

''Man Tong'' means ''full house'', which is what the place can probably expect when it opens next week with its full complement of xiao long bao dumplings (four for $8.50) and other signature noodle and dumpling dishes, alongside an array of regional Chinese offerings, including Sichuan pork wontons with hot chilli sauce (eight for $15.80) and lobster san choi bao ($18).

The Man Tong Kitchen will allow diners to see the noodlemeisters in action through a large window. Look closely and you may even catch a glimpse of Shanghainese executive chef Yi Bo Wang, a former head chef at the Yangtze New World Hotel. Man Tong Kitchen is on level one of Crown, next to the new pub, Jimbo & Rex.
