Chef Nick Creswick, who in June closed Libertine, the North Melbourne restaurant he owned and operated with wife, sommelier Zoe Ladyman, is the new executive chef of Werribee Mansion. "I like a challenge," says Creswick, of overseeing the menus for the mansion's high tea, 90-seater Joseph's restaurant and banqueting department.
Creswick is also developing its kitchen garden and green house.
