Martin Boetz kicks off pop-up at Garden Life in St Peters

According to some leading food pundits, the pop-up was supposed to be in its death throes in 2015.

Clearly Sydney didn't get the memo. Former Longrain chef Martin Boetz is poised to join a party populated with new arrivals including The Chalet and a Balvenie pop-up bar operating next weekend at The Strand Arcade.

On Saturday, July 4, Boetz kicks off a permanent fortnightly pop-up at Richard Unsworth's Garden Life in St Peters. The chef-turned-farmer will sell produce from his Sackville farm as well as other Hawkesbury farmers. He'll also cook a dish each week, starting with his pulled pork rolls with homemade chutney and greens.

"Richard and I are great friends and he is a long-time supporter of Cooks Co-Op. Having the market at Garden Life is a perfect synergy and Richard's customers really get what we do and what we are about," Boetz says.

Unsworth argues the fortnightly market enables his customers to ask the chef for advice on cooking the produce as well as encouraging them to grow their own.

"We will also be putting in coffee and will explore other options regarding food, but we don't want a fully functioning cafe," he says.

"I like the idea of people coming in for a really beautiful afternoon tea, or a ploughman's lunch. What could be better than a cake made that morning and a really great cup of organic tea."
