Chef Martin Boetz has confirmed he is leaving Longrain on June 30 to continue working on his farm at Sackville in the Hawkesbury River where he has established the Cooks Co-op.
There are two Longrain restaurants, one in Sydney and the other in Melbourne.
Boetz will continue to sell produce to restaurants in Sydney and eventually open a cooking school for professional chefs.
