Matt Kemp isn't cutting any corners with his comeback at the Charing Cross Hotel Dining Room, which opens this week in Waverley.

Even the bar menu has thrice-cooked fries with shallot aioli, Barramundi croquettes and confit of lamb shoulder.

Kemp, who rose through the ranks at Banc before opening Balzac, opens the pub restaurant on Wednesday.

We've had a sneak peek at the menu and like what we see.

Spanner crab, cuttlefish and chilli pasta, corned brisket of Tajima wagyu and a swordfish dish served with a salad of cucumber, parrilla and pink grapefruit.

More than half the mains slide in at $30 or under; you've got to like that.
