Matt Moran and Peter Gilmore tighten their hold on Circular Quay

Chefs Matt Moran (Aria) and Peter Gilmore (Quay) are masters of the House. The Moran-helmed Opera Bar relaunched last night with a new timber-heavy look, charcuterie room and raw bar. Gilmore is set to tackle the Opera House's Bennelong restaurant site in June.

"To be really honest, it is competition but I'm glad it's Pete," Moran says. "I've got a great relationship with him and [Quay owner] Leon Fink. I had a great relationship with Guillaume [Brahimi] when he was there too. We all work together."

"People ask me a lot who is the best cook in Sydney, and quite often I'll say Pete. It's better to have competition that does a quality job."

"It's going to be a really interesting little precinct we have here," Gilmore says. "With Aria nearby, Quay across the water, and now Opera Bar and Bennelong, in a way Matt and I sort of have this little loop of the harbour which is quite beautiful."

Gilmore laughs at the suggestion of investing in jet ski to move between both of his restaurants.

"It's definitely something we've joked about a few times," he says.
