Maurice Terzini crew in new Darlinghurst venture

Icebergs restaurateur Maurice Terzini is one of the creative posse of owners behind a new restaurant and bar opening on Victoria Street in Darlinghurst in July.

The multi-level project slides into the space above Infinity Bakery, with a restaurant, Salon De Thé, on level two and Bar De Thé the next floor up. Terzini has snared a yet to be announced chef from Melbourne to front the restaurant.

It is the first collaborative venture from the freshly minted Ciroc Collective – its members include Ksubi fashion label founders Dan Single, George Gorrow, Paul Wilson and Michael Nolan.

"The boys have been searching Sydney for a loft-style venue for over a year now. The goal is to create a modern take on French-Vietnamese cuisine and create Sydney’s first established martini bar," Wilson told Good Food.

Expect plenty of Ciroc vodka to be featured, but Wilson says the brand won't be exclusive.

"Salon De Thé translates to tearoom in French, we will be infusing black and herbal teas through our drinks and food menus," Wilson says.

Terzini says the interior will feature a "speakeasy vibe but no heavy wood".

While he's lent his experience, Terzini says it'll be driven by a new generation of local young guns.
