The four-day Melbourne Barbecue Festival begins on Thursday, January 29, culminating with an open day at the Queen Victoria Market on February 1. Entry is free and local barbecue aficionados, including Burn City Smokers and Bluebonnet Barbecue, will be rustling up brisket, ribs and slaw.

The festival, founded by Matt and Margaret Vitale, of Southside Smokers, and marketing consultant John Curtin, is a collaboration with the Kansas City Barbecue Society, which sanctions up to 450 contests and festivals around the world annually.

Teams of cooks will also compete for bragging rights in a barbecue cook-off, with the winner to be crowned Melbourne's first grand champion at a Kansas City Barbecue Society-sanctioned event.
