Melbourne chefs on the move

Time to catch our breath after chasing chefs around lately.

Rob Kabboord has been appointed chef de cuisine at Sydney's Quay where he was sous chef a decade ago. Stuart Munro will take over as head chef of Kabboord's Northcote restaurant Merricote, promising to retain the Dutch influence on the modern European food.

Over at Rosetta, former senior sous chef Angel Fernandez has been promoted to head chef, replacing Brendan Sheldrick who has left cheffing to focus on farming. Fernandez and owner Neil Perry have reworked Rosetta's menu "reducing the total number of dishes … and making everything more substantial", says Perry.

Persimmon's new head chef is Portuguese-born Nuno Gabriel, who was head chef at Bistro Vue when he moved to Melbourne from London in 2010. His first menu will have a slight Portuguese influence and emphasis on sharing; it starts in two weeks.
