Melbourne Food & Wine Festival throws chefs together in interesting ways. Italian chef and charcuterie master Massimo Spigaroli of Antica Corte Pallavicina restaurant in Parma, and chef George Calombaris had a connection before they cooked together at Calombaris' Mama Baba in South Yarra. George visited Spigaroli in Italy recently and the Italian made him his own culatello (cured pig rump) that will be ready in five years. Peruvian chef Virgilio Martinez was taken foraging by Anada's Jesse Gerner for the dinner they're cooking together, and Matt Wilkinson and Hawaiian chef Ed Kenney visited producers and organic farms in the Daylesford region before a night out at Mamasita, Cumulus Up and Brooks.
