Where Justin Hemmes ventures, quality operators are sure to follow. Sugarcane Restaurant owner-chef Milan Strbac has nabbed the site of the old Nissaki Greek Taverna, at the south end of Coogee Beach, where he'll open a beachside branch of his Surry Hills restaurant in July.

With Merivale's Coogee Pavilion changing the game in Coogee, Strbac argues there's room for more good food operators. "There's oversupply in areas like Surry Hills. I looked at Coogee Pavilion and how well it has done. Then I found this space overlooking the ocean. We'll keep all the classics from the [Surry Hills] menu but do more seafood."
