Looking for a food trend for 2014? Chef Damion Brown thinks he's found one in Caribbean food and is backing his hunch with Jonkanoo, a new restaurant that will open in Surry Hills at the end of the month. So, what's behind his prediction?

"It's about the only thing I can see Sydney doesn't have covered already," reasons the Jamaica-born chef who grew up in Brooklyn.

Jonkanoo will open at 583 Crown Street, and Brown will trawl everywhere from Haiti to Jamaica for dishes. With a background in film catering - including working on the Mission Impossible franchise - you'd think he'd be experienced in handling prima donna customers.

"Actually, the stars are generally easy. When we did Australia, we were in the middle of nowhere. Nicole Kidman was really down to earth, but one of the people working with her wanted things flown in from Perth."
