Two Fold, the pub restaurant from My Kitchen Rules' identical twins Helena and Vikki Moursellas, has opened for business at The Civic Hotel on Pitt Street.

The 2014 MKR finalists are known for their simple take on Greek cooking and released Taking You Home, a collection of recipes inspired by their Greek family table, in February. While dishes from the cookbook feature at Two Fold, the bistro isn't an all-Hellenic affair.

"We didn't want to do a full Greek menu because there's already [Peter Conistis'] Alpha Restaurant up the road," Vikki says.

"Instead we've gone modern Australian and incorporated a few beautiful Greek dishes out of the book."

Greek-inspired plates include "lamb pie" moussaka ($24), pork belly with braised cabbage, potatoes and gravy ($22), grilled Clarence River octopus with oregano, chilli and lemon ($24) and the four-generation old Revani semolina cake with orange, lime mascarpone and spiced syrup ($22).

More traditional pub fare involves chicken ribs with smoked chilli mayonnaise ($15), Riverina scotch fillet with horseradish butter ($22) and handmade sausages of pork neck, red onion and parsley ($20).

All this makes The Civic Hotel one of the more interesting pubs to eat in with top-notch Lao/Thai street food from Green Peppercorn available upstairs.

Robert Taylor (ex Swine & Co) has been enlisted as head chef at Two Fold, however this doesn't mean the girls will be taking a back seat.

"I'll be running the floor and Helena will be in the kitchen," Vikki says.

"If she needs a break then we might swap around. We have an open kitchen and people can see us working, which I think is really important.

"We're not just here to show our faces, we're here to work."
