Mystery ingredient at Devon Cafe

Zach Tan, the phamacist-turned chef formerly at Guillaume Brahimi's Sydney and Melbourne restaurants will reboot Surry Hills' Devon Cafe in the evenings starting July 3.

The Malaysia-born chef with a fine-dining pedigree (he also worked at Pier) has lobster rolls, pig's ear katsu and tamarind chilli popsicles on his draft evening menu.

The KJI fried chicken wings caught our eye.

Is KJI a mystery new ingredient? Apparently it is short for North Korea's former leader Kim Jong il.
