House-cured pastrami and pancetta are on the menu of Brisbane's newest food truck. The Local Mobile Deli launched on Friday at The End bar in the West End.

Owners musician Dominic Bird and builder Sam Davis describe the truck as a passion project. "Sam and I were in the States last year and immersed ourselves in American culture and the food trucks in places such as Austin in Texas," Bird says.

"Some of the famous food trucks have an almost religious following and we wanted to inspire the same in Brisbane, where it's not really happened much."

The pair have renovated a 1980s pie trailer they bought in rural Queensland two months ago and will be offering sandwiches made with meat and vegetables they've cured and fermented themselves.

"We wanted to do things that were handmade and from scratch," Bird says.

"We've both always been interested in curing and fermenting so we began a year ago to make pastrami; wet curing it, making corned beef, then smoking it and steaming it."

As well as a pastrami Reuben (pictured), they'll have rotating specials like Carolina-style chopped pork served with apple and cabbage slaw on a white bun; smoked brisket; and "kim cheese"- a fermented kimchi and cheese toastie.

"We're looking at doing a haggis toastie too. It's all about comfort food but doing things that you won't come across everywhere. Not everyone will like everything, but that's okay."

Bird and Davies have kept their prices under a wallet-friendly $10. Keep an eye on their Facebook page for locations.
