New manager for NGV's Persimmon

Chef Gabriel Martin has flown under the radar since the demise of his Metropolis dining room on Sydney Road but he popped up as executive chef of the National Gallery of Victoria with Peter Rowland Catering just a few months ago. Saying he had ''a few months off doing odd jobs'' after Metropolis, Martin now runs Persimmon, the gallery's flagship restaurant, as well as the other gallery venues, including Gallery Kitchen, the Tea Room and Crossbar Cafe.
