Coffee chemistry, anyone? That's what is on the menu at Industry Beans, a new roastery-cafe in Fitzroy. Trevor and Steve Simmons, of Northcote's Penny Farthing Espresso, have refitted a warehouse shell where they roast, brew and do other specialty coffee stuff.

As well as what passes for the usual in Melbourne now - espresso, cold drip, pourover, Aeropress and siphon coffee - they are experimenting with some unusual presentation methods, such as their coffee spheres - little gelatinous pearls of Ethiopia Yirgacheffe treated with calcium lactate and sodium alginate. Chef Shaun Landman's food menu is similarly adventurous, while barista and roaster Steve Simmons is a true engineer. Industry Beans, Unit 3, corner of Rose and Fitzroy streets, Fitzroy, 9417 1034.
