New opening: Merriweather Cafe

Good coffee is a given at South Brisbane's newest cafe. Merriweather, due to open next week, is co-owned by Josh Russell of Cup Specialty Coffee in nearby West End, who also happens to be a highly regarded and awarded coffee roaster.

The cafe is in the spanking new Vine Apartment block in Russell Street, overlooking Musgrave Park.

Co-owner Mairi Mackinnon, who managed Cup Specialty Coffee with Russell, says that while they're yet to employ a head chef, they intend to focus on "local seasonal, simple food done well".

Some of the produce will come straight from farmers via Food Connect and Mackinnon says there' ll also be 'lots of in-house baking'. Plans are afoot to install a kitchen garden and beehives on the building's rooftop. Russell will be roasting the beans, including a special house blend.

Merriweather will open for breakfast and lunch to begin with, but Mackinnon says a liquor licence is in the offing, with hopes of also opening some evenings if business takes off.
