Nitrogenie creates beer flavoured ice-cream for Oktoberfest

We hope you like your beer cold. Freezing cold, in fact. Molecular ice-creamery Nitrogenie is celebrating Oktoberfest with a new beery ice-cream flavour.

General manager Todd Farr created the ice-cream using a traditional German wheat beer, Paulaner Hefe-Weizen, which he reduced over heat to burn off any alcohol. We've yet to taste-test the results but apparently the process leaves behind a very delicate and sweet beer caramel which is then infused into a vanilla anglaise, and frozen using liquid nitrogen. The result is a smooth "Pale Ale Caramel" ice-cream, which is served with sea salt pretzels.

According to Matt Emmerson, owner of craft beer venue Brewski Bar, the process brings out the caramel flavour of the malt, with the bitterness of hops just discernible at the finish.

"It is definitely an ice-cream but with the complexity of a beer," Emmerson says.

The special flavour will be available at Nitrogenie's South Bank and Indooroopilly stores this weekend while stocks last. See nitrogenie.com.
