Paddock-to-plate philosophy for Geelong's Pakington Street

Gail Thomas

With its Marimekko wallpaper of cows frolicking in green pastures and display cabinets stocked with free-range eggs and meats from local producers including Barrabool Hills beef, Meredith and Barwon lamb and Greenvale pork, Jasmine and Keith Bainbridge have stamped their paddock-to-plate philosophy on Warren & Hutch in Geelong's hip Pakington Street. Locally grown and sourced organic and chemical-free vegetables and shelf products, including olive oils and spices, add to the mix. Keith's background as a chef of 20 years in Britain, and more recently at the Queenscliff hotel and Athelstane House, is reflected in the selection of take-home meals on offer along with a changing breakfast and lunch blackboard menu. There's a rustic vibe and communal table. Try the pan-fried spatchcock with roasted vegetables, chicken-and-leek pie, or a sweet treat with a locally produced Roastcraft coffee.
