The Gasworks is to have a new tenant. Jamie Webb, owner of Peasant, Cabiria and Lefty's Old Time Music Hall, never one to stand still, is expanding his portfolio, having just signed a lease to join Hatch & Co, Reef Seafood and Sushi and the freshly opened La Rotisserie at the Newstead precinct.

Webb says he's opening a Spanish bar/eatery with the working title Diego & Sons. It's considerably smaller than either Lefty's or Peasant at just 90 square metres but Webb says there's also plenty of outdoor seating. The look will be suitably rustic, featuring patriotic red, black and yellow while the menu will boast a range of “home cooked” style Spanish dishes. There will be a focus on paella, with a paella pan permanently on the burners.

Webb has been getting some menu help from the matriarch of a third-generation Spanish restaurateur family, who's been cooking up a storm, he says. An “approachable and fun” drinks list will be on offer as well as range of styles of Sangria. Webb says he's currently interviewing for an executive chef to oversee his venues.
