Pastry whiz Shaun Quade plans South Melbourne fine diner

Swimming against the casual eating tide, two chefs plan to open a fine dining restaurant in South Melbourne.

Best known as a pastry whiz, chef Shaun Quade (ex-Quay and Biota) and collaborator John-Paul Feichtner (ex-sous chef at Paris's Le Chateaubriand) will open a fine dining restaurant in South Melbourne next year. The Coventry Street premises previously housed the Bohemia Cabaret Club. The pair plan to swim against the torrent of casual eating with a more formal, fine dining pitch and creative chef-driven ("but not trend-driven", promises Quade) food in the 40-seat restaurant and 40-seat bar. Sydney's Sixpenny is an inspiration, not least because it's led by a pair of ambitious young chefs. Quade and Feichtner aim to open their as-yet-unnamed restaurant in the first quarter of 2015.- Dani Valent
