Paul Wilson has a trophy cabinet full of Melbourne's top awards dating back over a decade to his Chef of the Year nod during his spell at Radii.
Now Sydney will get a taste of the crowd-pleasing food he produced at the Melbourne Pub Group.
Wilson will oversee the transformation of the Macquarie Hotel, on Wentworth Avenue, Surry Hills.
Wilson, who worked his way through Terence Conran's London restaurants and will stay in his role as creative food director at Maurice Terzini's Icebergs restaurant in Bondi, will also consult at the Macquarie.
"The venue will celebrate all things Latin at every price point. I love that whole Hemingway era, and there's a bit of that distressed Cuban lounge feel there," Wilson says.
A hotel spokesman says they hope to open the eatery in November, possibly rebooting the Harpoon Harry's moniker.
"We'll let the food do the talking," Wilson says.
