Due to open around the second week of July - "assuming everything goes according to plan", co-owner Dave Parker hastens to add - Peruvian restaurant Pastuso is kicking into gear with the arrival in Melbourne of chef Alejandro Saravia (ex-Morena in Sydney).

Saravia has been putting in a few shifts on the floor of sibling restaurant San Telmo, "mainly to develop a relationship with Ben Wood, who's assistant manager at San Telmo and a co-owner of Pastuso'', says Parker.

They've also just received their shipment of Peruvian chicha (street art) posters, which will decorate the Flinders Lane 180-seater.

"In the meantime, we're going to start putting them up in laneways in the city - anyone who gets a photo of themselves with one and posts it on our Pastuso Facebook page gets a free pisco sour when we open.''
