It isn't every day a member of Sydney's elite two-toque club ends up on the name and shame list of the NSW Food Authority.
And the $880 fine for Pilu at Freshwater sounds like something you'd expect from a hawker stand in Bangkok, not a Sydney restaurant.
"Cleaning of dishes and equipment outside of premises, previous warnings given," the rap sheet reads.
Pilu owner Giovanni Pilu says the incident took place at the kiosk below the restaurant and believes he has been unfairly targeted.
"The kiosk is so small we only have a small shelf in the kitchen area to stack utensils for washing, so we had some cups on a trolley outside. There's a million places in Manly that do it," he says.
