Pop-up Vietnam ... in Brunswick

Three hospitality veterans, Peter Healy, Chantelle Kallmeier and Kath Utry, travelled through Vietnam in 2012 and loved the bia hoi (beer brewed fresh daily) experience so much they decided to bring it to Melbourne. ''It was important to us to formulate the idea and do it properly and not call it a pop-up,'' says Healy, a sommelier and hospitality consultant. The trio found a space at 130 Lygon Street, Brunswick, where they'll have a ''summer fling'' every Thursday and Sunday until March 24. Stanislavski, formerly head chef at Fitzroy's now-closed St Jude's, will cook Vietnamese dishes, including barbecued quail and mini banh mi, to accompany beer from Brunswick brewery Thunder Road. The 60-seater doesn't take bookings and is cash only.
