Pyrmont restaurant pop-up Bottle and Beast has been such a success chef Jared Ingersoll will reopen it in a new form when it reaches the end of its run in the next couple of weeks.
He'll rebirth it as Barrel and Beast for a two-month run, focusing on a simpler wine offering with wine from the barrel.
But that will be the end of the Pyrmont adventure. "It is never going to be a bricks and mortar business," he says.
